Description

This Easy and Cheesy Risotto is creamy, comforting, and surprisingly simple to make — no heavy cream required! Toasted Arborio rice simmers gently with warm broth, butter, and Parmesan for a rich, velvety texture that feels luxurious without the fuss. Perfect for weeknights, special dinners, or cozy family nights in.

Instructions

  • Warm the broth.
    Heat your chicken bone broth in a small saucepan over medium-high heat or microwave in a glass measuring cup for a few minutes until hot (not boiling).
  • Toast the rice.
    In a large skillet over medium heat, melt 1 tablespoon butter. Add the rice and cook, stirring occasionally, until the grains look translucent around the edges (about 2–3 minutes). Stir in Gourmend Green Onion Powder and kosher salt until aromatic.
  • Add broth in stages.
    Pour in ½ cup bone broth and cook, stirring, until the liquid is absorbed (about 3–4 minutes). Add another ½ cup bone broth and repeat.
  • Cover and simmer.
    Stir in 1 cup bone broth, bring to a simmer, then reduce heat to medium-low. Cover and let it simmer for 15–20 minutes without lifting the lid, until the rice is just al dente.
  • Finish the risotto.
    Uncover, pour in the remaining ½ cup bone broth, and cook, stirring, until the liquid is fully absorbed and the rice is creamy and tender.
  • Add the cheese and serve.
    Remove from heat and stir in Parmesan, pepper, and the remaining 1 tablespoon butter until melted and silky. Taste and adjust seasoning if needed. Serve warm, with extra cheese on top if desired.
