Ingredients
- 1 lb ground sausage
- 1 tbsp Italian seasoning
- 1 tsp dried parsley
- 3/4 tsp black pepper
- 1/2 tsp fennel seeds
- 1/4 tsp paprika
- 1/2 tsp red pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 tsp salt (more or less to taste)
- 1/2 red onion, diced
- 1 large carrot, chopped
- 2 celery stalks, chopped
- 2 tbsp tomato paste
- 1 (15-oz) can crushed tomatoes
- 1 (15-oz) can diced tomatoes
- 4 cups bone broth or vegetable broth
- 2 cups fresh spinach and arugula
- Optional: 4 oz dried pasta of your choice
- Optional: grated Parmesan cheese for serving
Instructions

Heat sausage in a large pot over medium-high heat. Add seasonings halfway through cooking and cook until browned.

Add onions, carrots, and celery. Sauté until softened, about 5 minutes.

Stir in tomato paste and cook until thickened.

Add crushed tomatoes, diced tomatoes, and broth. Bring to a boil.
