Ingredients

1 lb ground sausage

1 tbsp Italian seasoning

1 tsp dried parsley

3/4 tsp black pepper

1/2 tsp fennel seeds

1/4 tsp paprika

1/2 tsp red pepper flakes

1/2 tsp garlic powder

1/2 tsp onion powder

2 tsp salt (more or less to taste)

1/2 red onion, diced

1 large carrot, chopped

2 celery stalks, chopped

2 tbsp tomato paste

1 (15-oz) can crushed tomatoes

1 (15-oz) can diced tomatoes

4 cups bone broth or vegetable broth

2 cups fresh spinach and arugula

Optional: 4 oz dried pasta of your choice

Optional: grated Parmesan cheese for serving


Instructions

  • Heat sausage in a large pot over medium-high heat. Add seasonings halfway through cooking and cook until browned.

  • Add onions, carrots, and celery. Sauté until softened, about 5 minutes.

  • Stir in tomato paste and cook until thickened.

  • Add crushed tomatoes, diced tomatoes, and broth. Bring to a boil.

  • Stir in spinach and arugula until wilted.

  • If adding in… Cook pasta either in the soup or separately until al dente.

  • Taste and adjust seasonings. Serve with Parmesan cheese if desired.
