This recipe is for the gluten free version of my Chinese Almond Cookies . With the same texture & light nutty, buttery & sweet flavor. No one will know the difference!

Notes and Tips for Success
1 1/4 cups of almond flour, lightly packed
1/4 tsp of kosher salt
1 3/4 cups of rice flour
1 1/8 cups of granulated sugar
1/2 teaspoon of baking soda
1 cup (2 sticks) of unsalted butter (cut into cubes, then chilled)
1 teaspoon of almond extract
Thinly sliced almonds (this is for the top)
