Ingredients
Serves:
8 Quarter Pound Burgers
Burger Patties
½ of a bunch of green chopped
2 garlic cloves - smashed and chopped
2 lbs of ground sausage
1 Tbls and 1 teaspoon of soy sauce
1 Tbls and 1 teaspoon of Worcestershire Sauce
1 teaspooon of salt and pepper
Black Sesame Buns
13.2oz or 2 ¾ cups all-purpose flour
2 teaspoons (1 packet / 7g) instant yeast (or active dry yeast)
2 Tablespoons sugar
1 teaspoon salt
1 cup milk (milk), heated to 120-130° F for instant yeast (or 110-120°F for active dry yeast)
2 tablespoons light tasting olive oil
1 egg
Topping for buns
1 additional egg, beaten
3-4 Tablespoons black sesame seeds
Asian Style Rémoulade
1 cup Mayo (Japanese Mayo is preferred)
1 Tbsp sugar (omit if you use Japanese Mayo)
2 Tbsp rice (or rice wine) vinegar
1 tsp sesame oil
1 tsp soy sauce
1 Tbsp chili garlic sauce
3 green onion whites, chopped (reserve the greens)
Asian Cucumber Salad
1 English Cucumber, thinly sliced (I recommend a mandolin/slicer, but carefully with a knife is fine)
1 1/2 teaspoon sea salt
2 cloves garlic, grated
2 Green Onions Chopped (optional)
1 tablespoon rice (or rice wine) vinegar
1 tablespoon soy sauce
1 teaspoon of fish sauce
1 teaspoon white granulated sugar
1/2 teaspoon sesame oil
1 teaspoon chili garlic sauce
Optional Toppings
1 Tablespoon chopped fresh cilantro (1-2 sprigs)
1 Tablespoon of sesame seeds
