  • 16 oz spaghetti
  • 5 medium eggs
  • 2 tablespoons heavy cream
  • 8 oz grated Romano cheese (or a mix of Parmesan + Romano)
  • 8 oz thick-cut bacon, diced
  • Salt, to taste
  • Lots of freshly ground black pepper
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Cook the pasta
    Bring a large pot of generously salted water to a boil. Cook spaghetti until al dente.
  2. Make the sauce base
    In a bowl, whisk together eggs, heavy cream, grated cheese, and a generous amount of black pepper.
    Do not add salt at this stage.
  3. Cook the bacon
    In a large skillet over medium heat, cook diced bacon until crisp. No oil needed—the fat will render out.
  4. Reserve pasta water
    Before draining, scoop out about 1 cup of pasta water and set aside.
  5. Combine pasta and bacon
    Transfer hot pasta directly into the skillet with bacon. Turn off the heat.
    Add a splash of reserved pasta water if needed to loosen.
  6. Create the sauce
    Pour in the egg mixture and immediately toss continuously using tongs.
    The residual heat will gently cook the eggs into a creamy sauce.
  7. Adjust consistency
    Add reserved pasta water a little at a time until the sauce is glossy and coats the pasta.
  8. Finish and serve
    Serve immediately with extra cheese, freshly ground black pepper, and chopped parsley if desired.

Notes

  • Turning off the heat before adding the egg mixture is essential to prevent scrambling
  • Use freshly grated cheese for the smoothest sauce
  • Pasta water is key for creating a silky, emulsified sauce
