Recipe: Peppermint Brownie

This recipe is my holiday version in honor of my husband’s all-time favorite dessert, the brownie. Chunks of chocolate chips, with a fudgy rich texture that crumbles on the top and has that perfect amount of peppermint that throws you into holiday nostalgia. Peppermint hot chocolate by a cozy fire listening to Nat King Cole and watching the snow fall gently.

This peppermint brownie recipe is a little different, in that I use powdered sugar (instead of granulated sugar) to help make the brownies denser and hold their fudge-like texture together. Much like fudge, they are also decadent and rich, so I highly recommend cutting them into smaller squares much as you would fudge. trust me, your tummy will thank you.

Recipe: (No Lemon) Blueberry Crumble Coffee Cake

A week or so ago, I was craving something with blueberries, but I didn’t want muffins. Plus I wanted something I could double and bake easily so I could bake one for a friend who just had a baby (to save a little time one morning for breakfast). So I thought blueberry bread would be good. Unfortunately, all the bread recipes I saw had lemon in it and I really didn’t want to have to go back to the grocery store to get a lemon… So I set out to construct my own blueberry bread, but in the course of my attempt, I ended up with a very yummy, very dense blueberry coffee cake instead. Which, honestly, I was more than happy to eat (and so was my family). 🙂

Recipe: Apple Pumpkin Muffins

The weather is starting to cool and the leaves are changing color here in Wisconsin. As baking in my house becomes more abundant, thanks to the cooling weather, I can’t help but start experimenting.

I love pumpkin and apples and RIGHT NOW they are in abundance! From local farms to farmers’ markets to grocery stores. This just means this is the perfect time to make (and create) all kinds of yummy treats with both. Today it’s Apple Pumpkin Muffins.

Recipe: Zucchini Bread

I try to make recipes that you can adjust for your family. If you actually prefer nuts, you could add 1 cup of walnuts or pecans to it if you wanted. My kids don’t always want nuts in bread like this or the banana bread I make, if I feel like adding nuts, I’ll make muffins instead and split the batter so that I can add nuts to half.

If you make muffins, they will take less time to bake, A LOT let less time, so keep that in mind.
