Banana Muffins

Before you get started…

I will warn you, that banana muffins take a little time. Because bananas (like most fruit) hold a lot of liquid, it might take a good amount of time to bake (depending on your oven, it could take up to 45 minutes to bake), so if needed, plan ahead and bake them the night before (it tastes amazing hot or cold and is totally worth the time).

How to make the muffins.

Here’s the gist of how to make the muffins. Or you get the full recipe below.

Step One

First, preheat the oven to 350° F (177℃).

Step Two

Line or grease a muffin tin and set aside.

Step Four

In a mixing bowl, mash (or blend with a hand mixer) the bananas with the egg, sugar, vanilla, and butter

Step Five

Add the flour, baking soda, and salt, then carefully continue mixing until blended together.

    Step Six

    Distribute the banana muffin batter evenly between all 12 muffin spots.

    Step Seven

    Add the crumble (see the directions below) to the top of the muffin batter. I recommend using your hands to add the crumble and get a little messy. Otherwise, you end up with huge chunks, and most of it is in the middle, which is just going to make it take longer to bake.

    Step 8

    Bake for 45 minutes to an hour or until you poke a skewer through the middle and it comes out clean!

    Crumble Instructions

    1. In a mixing bowl… add all sugars, salt, oats, and flour in a bowl then whisk all together until completely combined.
    2. Add melted butter, then take a fork and mix, breaking apart any huge pieces. It should look like uncooked granola.

    Note: For mixing the crumble, I usually just use the same bowl. It doesn’t matter if there is a little batter in it.
