My Go-To Red Velvet Cake

Red velvet cake is more than just a white cake dyed red, it’s also not a full-fledged chocolate cake. Instead, it has a buttery, tangy flavor with a slight chocolate undertone. Red velvet cake has a pretty unique flavor with an old-fashioned, from-scratch quality that I love. In my opinion… no boxed red velvet cake mix can compare to the work and effort.

Recipe: (No Lemon) Blueberry Crumble Coffee Cake

A week or so ago, I was craving something with blueberries, but I didn’t want muffins. Plus I wanted something I could double and bake easily so I could bake one for a friend who just had a baby (to save a little time one morning for breakfast). So I thought blueberry bread would be good. Unfortunately, all the bread recipes I saw had lemon in it and I really didn’t want to have to go back to the grocery store to get a lemon… So I set out to construct my own blueberry bread, but in the course of my attempt, I ended up with a very yummy, very dense blueberry coffee cake instead. Which, honestly, I was more than happy to eat (and so was my family). 🙂

Recipe: Mint Chip “Milkshake” Cupcakes

I am a huge Mint Chip Ice Cream fan (as is my oldest whom I made these cupcakes for). My oldest just had a birthday party recently and wanted some kind of fun cupcake for the party. Enter…. mint chip milkshake cupcakes. A fun play on basic cupcakes with a milkshake flair.

Last year, I made a cake that looked like a dragon (yes this kid is also really into dragons). But that was a lot. I had to bake the cake, freeze it, cut it, “glue it” and then frost and decorate it.
