This pandan coconut french toast recipe is gonna be your next big breakfast obsession! I know it. I made this a couple of different ways and everyone agrees that the Pandan Flavor was what put it over the top!

I recently discovered Halo Pantry All-Natural Flavorings and have become obsessed. They’re so good, no food coloring, and you’re supporting a small business!

So What is Pandan?

Pandan is a tropical plant that grows abundantly in Southeast Asia. In Chinese culture, it is known as the “fragrant plant” because of its unique, sweet aroma. The leaves are used for their flavor in many Thai and Southeast-Asian dishes. Pandan is also sold as a paste, extract, and powder, which is used to flavor desserts, much like we use vanilla here in the west. I personally love it and the taste reminds me of a combination of coconut and vanilla. it’s a subtle flavor that adds a wonderful sweet taste.

About the pandan coconut french toast process

I really wanted this pandan coconut french toast to be as easy as possible. I even did this, where I baked it all together with bacon on a separate baking sheet so that I could make sure that I could basically have breakfast done in the oven with minimal work or mess.

So I decided baking the pandan coconut french toast on a sheet pan was the best option. It really did make everything super easy. To make it even easier on myself I bought sliced brioche bread (I highly recommend it, it’s soft and buttery, and there really isn’t another replacement for it). Most grocery stores that I’ve seen have them and trust me… I live in La Crosse Wisconsin and am constantly having to find adaptions for Chinese food, so trust me when I say… Sliced Brioche Bread is more readily available than it used to be. But… If you can’t find it… like so much else… Amazon does offer it.

The process itself is fairly easy. Make the pandan coconut french toast batter, put it all on a baking sheet, and bake. I like to serve mine with shredded coconut, but you don’t have to do that.

Some Notes

A few things to keep in mind. They’re not going to make or break this pandan coconut french toast recipe, but they might save you some stress.

  • If you decide to bake a sheet of bacon with it as well, I would rotate the pans halfway through to ensure your bacon (or your french toast) does not burn.
  • Make sure to ladle a thin amount of the batter on the pan before you put on the bread. it gives it more of that “dipped in the batter” texture we all know and love about french toast.
  • If you don’t have Pandan, use Vanilla Extract

Pandan Coconut Sheet Pan Baked French Toast

This French toast recipe is gonna be your next big breakfast obsession! Crisp on the outside, soft and creamy in the middle.

  • Total Time: 30 minutes
  • Yield: 5 people 1x

Ingredients

Units Scale
  • 1 lb bread of choice (I like brioche for this)
  • 1 [14 oz] coconut milk
  • 1 tablespoon Pandan extract
  • 1/4 cup brown sugar
  • 3 eggs

Instructions

  1. Pre-heat oven to 400° F
  2. Mix the extract, coconut milk, brown sugar, and eggs together in a bowl.
  3. Ladle enough of the mixture to just barely cover the bottom of a greased baking sheet
  4. Place the bread slices on, then pour the rest of the mixture onto each slice of bread (I used a ladle to do this).
  5. Bake for 25 minutes until set and dry looking on the top. They will be slightly golden on top (Don’t worry. the bottom crisps up more)
  6. Lay out the pan on a towel (or place them all on a platter), with a spatula for serving.
  7. That’s it, breakfast is done!
