Summer is a great time for pasta salads and one thing I’ve been really enjoying is revamping some favorite Tex-Mex recipes from my childhood. Many of you know that my dad is Chinese, but what many of you may not know is my mom is a Texan, and my dad, although Chinese, is associated greatly as a Texan himself (growing up there much of his life). I love, love, love this salad! Cucumbers are wonderfully cooling and even with that touch of spice, this salad is still a welcome snack during the summer heat. I went on a bit of a hiatus eating this salad, I grew up with my dad eating it a lot in the summers and when I was little, cucumbers were not my thing. but recently, I came back to it, want to try it again, and found a new love for it. I introduced it to my husband this year and he loves it so much that he said he wants to grow some cucumbers just so I can make it.

Homemade Sloppy Joe

A simple and just plain good homemade sloppy joe recipe that doesn’t take away from the ease of making dinner. Great make-ahead meal and perfect for your next picnic, bbq, or outdoor get-together.
For my Sloppy Joe recipe, I use my Everything BBQ Rub for the seasonings in my sauce. It adds sweetness and spice. The soy and Worcestershire sauces add amazing umami flavor and the pineapple is what gives it sweetness.

This recipe does use a lot of meat. Don’t worry, it’s a freezer-friendly meal! You can split this in half, eat one half and take the other half, let it get to room temp, and freeze it in a freezer-safe bag. -It will last 4 months in the freezer.

Recipe: Summertime Pasta Salad

I’m excited to share my latest take on pasta salad. This version is a simple and easy pasta salad that can be changed up to what you have on hand, making it a recipe for “Whatcha’ got in Your Fridge/Pantry”. This one I made to go with our BLTs. My eldest is not a pasta salad fan and even she ate this one (even the next day for lunch). This one can be changed a million ways, you can change the type of pasta, the meat, and the veggies. this is just what I wanted to use because I have leftover ham and broccoli.
