Wisconsin Supper Club Beer Batter Mix

Here’s an easy, gift-worthy version of my Wisconsin Supper Club Beer Batter Fried Fish. This mix is a cute, thoughtful, and affordable gift for really any time of the year, but with father’s day coming up, and if the dads in your life are anything like my husband, this gift is sure to please.

This recipe yields enough dry mix to make 2 – 4 lb fish batches. To make a batch, simply whisk together this mix with your favorite pale ale.

Microwave Quesadilla

The Cheap & Easy Edition: Not everyone has a stove, or can afford to go out to the local butcher and get the “best” chicken breast. But that doesn’t mean you have to eat ramen noodles every day either (not that I’m judging, I LOVE ramen noodles).

That being said, at some point, you gotta get sick of it. This quesadilla recipe is easy, quick, and cheap. My teenagers make this all the time. Best part? It does not sacrifice taste.

Oven-Baked Beer-Batter Fish

I know I do, but I also know, that you don’t always want to fry your fish, but still want that amazing crispy goodness. Well… Enter… the baked version of my Beer Batter Fish Fry. Just like my beer batter recipe, this recipe can be used on shrimp or chicken. I’m honestly not sure if this recipe would work in an air fryer, but if you try it, please let me know!

Also, I have a tartar sauce recipe that goes great with this Beer Batter Fish Fry.  Enjoy!

Homemade Sloppy Joe

A simple and just plain good homemade sloppy joe recipe that doesn’t take away from the ease of making dinner. Great make-ahead meal and perfect for your next picnic, bbq, or outdoor get-together.
For my Sloppy Joe recipe, I use my Everything BBQ Rub for the seasonings in my sauce. It adds sweetness and spice. The soy and Worcestershire sauces add amazing umami flavor and the pineapple is what gives it sweetness.

This recipe does use a lot of meat. Don’t worry, it’s a freezer-friendly meal! You can split this in half, eat one half and take the other half, let it get to room temp, and freeze it in a freezer-safe bag. -It will last 4 months in the freezer.

Recipe: Lemon Chicken Taco Dinner

You know what that means… I have a fun new recipe to share with you! This Lemon Chicken Taco Dinner can be as easy or homemade as you want. This is a no-shell taco dinner (but of course you easily put it all in a taco shell and it would also be AMAZING). I have included the recipes for each element of this dinner, but if you prefer, you can simply buy everything pre-made (except the chicken), and just assemble it after you grill the chicken.

I remember what it was like coming home from work and just wanting dinner done. So of course, I don’t want this to be daunting for you. If you happen to have the time to make it completely from scratch, I promise you won’t regret it. Price-wise, it is cheaper to make everything instead of buying it pre-made; but do what is best for you, your family, and your sanity.
