With the Super Bowl, it’s a time for everyone, to get together enjoy food and watch whatever it is you’re there for. The music (me), the football (sometimes me), the commercials (my kids). Although, really, I’m pretty sure it’s mostly for the food.
Last night, I decided to go Tapas themed and made everything finger-friendly. I made cubed-sized Beer Batter Fried Fish, these Patatas Bravas, green beans, and instead of spicy garlic aioli, I went Remoulade for the dipping sauce (this is one of my husband’s favorite sauces, and eats it with almost everything).
I mean, who hasn’t seen deviled eggs at a party/ Get-together? Deviled eggs are a loved (and sometimes hated) food. For my family, they are a must. A favorite for my oldest, husband, and even myself.
I am a huge Mint Chip Ice Cream fan (as is my oldest whom I made these cupcakes for). My oldest just had a birthday party recently and wanted some kind of fun cupcake for the party. Enter…. mint chip milkshake cupcakes. A fun play on basic cupcakes with a milkshake flair.
Last year, I made a cake that looked like a dragon (yes this kid is also really into dragons). But that was a lot. I had to bake the cake, freeze it, cut it, “glue it” and then frost and decorate it.
This recipe truly reflects more of a bruschetta feel. Lazy summer days that beg for moving slowly and snacking often. Chop tomatoes, slices of avocado and mozzarella cheese. What more could a girl ask for???
