Recipe: Peppermint Brownie

This recipe is my holiday version in honor of my husband’s all-time favorite dessert, the brownie. Chunks of chocolate chips, with a fudgy rich texture that crumbles on the top and has that perfect amount of peppermint that throws you into holiday nostalgia. Peppermint hot chocolate by a cozy fire listening to Nat King Cole and watching the snow fall gently.

This peppermint brownie recipe is a little different, in that I use powdered sugar (instead of granulated sugar) to help make the brownies denser and hold their fudge-like texture together. Much like fudge, they are also decadent and rich, so I highly recommend cutting them into smaller squares much as you would fudge. trust me, your tummy will thank you.

Homemade Sloppy Joe

A simple and just plain good homemade sloppy joe recipe that doesn’t take away from the ease of making dinner. Great make-ahead meal and perfect for your next picnic, bbq, or outdoor get-together.
For my Sloppy Joe recipe, I use my Everything BBQ Rub for the seasonings in my sauce. It adds sweetness and spice. The soy and Worcestershire sauces add amazing umami flavor and the pineapple is what gives it sweetness.

This recipe does use a lot of meat. Don’t worry, it’s a freezer-friendly meal! You can split this in half, eat one half and take the other half, let it get to room temp, and freeze it in a freezer-safe bag. -It will last 4 months in the freezer.

Everything BBQ Rub

This everything BBQ rub is perfect for beef, pork, lamb, chicken, and sloppy joes. I have used this on wings, beef and pork ribs, and even lamb ribs, and have found it to be incredibly universal and flavorful.

This makes a small batch of the bbq rub, to make quantity adjustments easier. If you double or even triple it, simply add the bbq rub to a mason jar, put the top on, and shake it up. You’ll always have it on hand.
