Versatile Snack Bars

Confession… I sometimes have a hard time finding the balance between balanced meals, snacks, and time. It was far worse when I was younger and had a conventional job at a bank. But still, 2 more kids (nope, now it’s 3), several blog posts, and a craft business later (I don’t do the craft side of my business anymore, but I’m definitely not any less busy), I’m still trying to find a happy medium. I know many of you are out there with the same struggle. I realize this is very much a #firstworldproblem and hopefully, I don’t sound like I’m whining. Truly, I know that I am blessed to be where I am now in comparison to where I was and to be able to share with you all, but balance is key… and finding it is sometimes hard.

I’m excited to share my latest take on pasta salad. This version is a simple and easy pasta salad that can be changed up to what you have on hand, making it a recipe for “Whatcha’ got in Your Fridge/Pantry”. This one I made to go with our BLTs. My eldest is not a pasta salad fan and even she ate this one (even the next day for lunch). This one can be changed a million ways, you can change the type of pasta, the meat, and the veggies. this is just what I wanted to use because I have leftover ham and broccoli.

Pizza Pasta Bake

I don’t know about you, but I have 2 major loves (other than Chinese food), Pizza and Pasta. So today I’m sharing my perfect mash-up, a pizza-inspired pasta bake, perfect for meal planning and great for those of you that need to make things ahead of time and then shove it into the oven while homework is being done, and boots are being cleaned off! I actually made this recipe back in 2016 when my blog was a side thought and I had recently had my third child, MJ as a way to sneak veggies into my son’s diet. Back in 2016, he was PICKY. Thankfully, that is no longer the case.

Recipe: Zucchini Bread

I try to make recipes that you can adjust for your family. If you actually prefer nuts, you could add 1 cup of walnuts or pecans to it if you wanted. My kids don’t always want nuts in bread like this or the banana bread I make, if I feel like adding nuts, I’ll make muffins instead and split the batter so that I can add nuts to half.

If you make muffins, they will take less time to bake, A LOT let less time, so keep that in mind.
