DIY Pudding Cups

Awe pudding cups that fun treat you would look forward to in your lunch, and let’s be we all ate first. I can tell you that that nostalgic feeling we have about pudding cups is not lost on our kids. My kids love pudding, and I was, for a while, buying those plastic pudding cups, ready to grab at any time for them. That is until I saw my garbage bin, filled with plastic pudding cups. 🙈

Marinated Cherry Tomato Mozzarella Salad

This marinated cherry tomato mozzarella salad is everything I love about summer food: no cooking (unless you want a crostino or two), fresh ingredients, and vibrant flavor. The cherry tomatoes marinate with olive oil, lemon, garlic, salt, and pepper for an hour or more if you so choose, so the flavors marry together well.

Recipe: Vanilla Iced Latte Protein Drink

Iced vanilla lattes are a great and simple go-to. By definition, a latte is an espresso with steamed milk. I changed it up for this one and used a protein drink for the vanilla flavor and “steamed” milk. It gives me a little pick-me-up in the afternoon and tastes great! This recipe makes 2 (one for me and one for the hubby), but you could easily split it and refrigerate it so you have an extra one for the next day. Or put it in a large glass and have a double, I’m not here to judge. 😉

This recipe yields enough dry mix to make 2 – 4 lb fish batches. To make a batch, simply whisk together this mix with your favorite pale ale.

Recipe: Mexican Street Corn Pasta Salad

Summer is a great time for pasta salads and one thing I’ve been really enjoying is revamping some favorite Tex-Mex recipes from my childhood. Many of you know that my dad is Chinese, but what many of you may not know is my mom is a Texan, and my dad, although Chinese, is associated greatly as a Texan himself (growing up there much of his life). So even though I was born and bred in Wisconsin, I grew up eating a lot, and I mean a lot of Tex-Mex food.
